Chicken & vegetable muffins

Yummy chicken & vegetable muffins to put into the lunch boxes of your kids.

Ingredients for 12 muffins:

1 cup of diced cooked chicken

2 fresh grated carrots

2 eggs

1 cup of flour

1/2 cup of fresh broccoli

1/4 cup of grated cheese

5 tablespoons of soft butter

3 tablespoons of sour cream

1 teaspoon of baking powder

1 grated garlic clove

Salt and pepper to taste

Some oil to grease your muffin pan

Prepare chicken & vegetable muffins:
In a large bowl whisk the eggs together with soft butter and sour cream, add flour mixed together with baking powder, add grated carrots, diced cooked chicken, broccoli, grated garlic clove and mix up.
Heat oven to 360F and grease your muffin pan with some oil:

Pour the mixture evenly into the muffin cups, place in to the oven and bake for 25 minutes, sprinkle the tops with some grated cheese, and bake for 5 more minutes to melt it.
